These rhubarb and almond muffins were inspired by a post by fellow blogger Zoe’s garden prints
I was inspired as much by her fabulous illustrated recipe as the fact that I have a considerable amount of pink and sweet rhubarb stems that would be criminal to compost.
I doubled the recipe and made 18. I took these to a directorate-wide team meeting with about 70 attendees; it added just the right amount of storming into the forming and norming team processes.
The mix is a rather wet batter, but go with it – it does work.
